Mango Sticky Rice


Mango Sticky Rice🌸

Mango sticky rice is a Thai dessert made with glutinous rice soaked in coconut milk and served with freshly cut mangoes. Sticky rice is found in abundance in Assam and is know as "Bora Saul" locally. We had some sticky rice which was gifted to us by the villagers during the last harvest and mangoes were the first of this season. Nothing better than whipping up this authentic Thai dessert, not to forget it's very easy to make too. Scroll for recipe which will make 5 portions.


Ingredients :


Sticky Rice/Bora Saul - 3 cups (I used a tea cup)

Mangoes - 3 (cubed or sliced)

Coconut milk - 750 ml

I used freshly made coconut milk from 1 large coconut

Sugar - 1 cup from the same cup used to measure rice.

Corn flour - 2 tbsp

Salt - a pinch



Method :


1. Soak the sticky rice overnight or for 8-10 hours. Next, steam the rice, avoid boiling it. The rice will take around 40-45 mins in a steamer. Avoid making the rice too mushy. Some texture is good for this dessert.


2. Bring the coconut milk and sugar to a boil,add salt. Switch off the flame once the sugar has melted.


3. Remove the rice from the steamer, transfer to a bowl and let it cool slightly. Add 2/3 rd of the coconut milk to your rice and let the rice soak it.


4. Bring the remaining sweetened coconut milk to boil with cornflour. Whisk to remove any lumps. Once it thickens, switch off the flame let it chill. This is the sauce for the dessert. Strain the sauce in case there are lumps.


5. Cut mangoes as you want. Scoop sticky rice on your dessert plate along with chopped mangoes and drizzle with the sauce. Your mango sticky rice is ready. 🌸
