Sugar free Apple and Dates Olive Oil Cake🌸
Craving a dessert but scared of the extra calories you might put on? This can be the go to dessert for all you health conscious peeps. The cake is completely sugar free, to make it healthier you can go ahead and substitute all purpose flour with whole wheat flour. The frosting is a condensed milk buttercream (see note) but you can skip it at all, I had some frosting left from the last cake I baked so I threw it on top. The butter is homemade from milk extracted from our cows.
Ingredients:
Flour 1 cup
Salt 1 tsp
Baking soda 1/2 tsp
Baking powder 1 tsp
Eggs 2 (room temperature
Olive oil 1/2 cup
Honey 2 tbsp
Medium Apple 2 (peeled and chopped)
Dates 3/4th cup (deseeded and chopped)
Milk 3/4th cup
Vanilla essence 1 tsp
Method:
1. Pre-heat oven at 180 degrees C. Line an 8 inch baking tray with parchment paper and grease with oil.
2. Mix all the dry ingredients and sift. Mix all the wet ingredients together and whisk.
3. Add the dry ingredients to wet ingredients and fold in apples and dates. Mix, till the batter comes together, do not over mix. Pour in the baking tin.
4. Bake at 180 degrees for 25 mins or till a toothpick inserted at center comes out clean.
NOTE:
*Condensed Milk Buttercream Frosting:
Whip 500 gms unsalted butter (room temperature) till light and fluffly. Add in a tin of chilled condensed milk (400 gms) and whisk for a minute. Your soft and luscious buttercream is ready within minutes. It resembles the texture of Swiss Meringue Buttercream but is far more stable and can be used under fondant too.
